If you're the outdoorsy type, birdwatching is fun and can be done in your backyard, and hiking is also fun. If you prefer to stay indoors (or live where the summers are ridiculously hot like here in Texas) you could pick up something simple like scrapbooking, or something complex and time consuming, such as crocheting. Painting or designing your own clothes can also be a lot of fun. If your feeling really creative, write a book.
