Also, along with the other great answers, the reason we don't use them as much any more is because serging the edges does the same thing. You really want to use pinking shears when you don't want the extra bulk of the serging thread, and if you want edges that ease a little easier.

I agree with the rest as far as keeping the material from raveling but it won't work on all fabrics. You didn't ask this but I'll give you a little tip on how to sharpen pinking shears at home (this will save you a lot of money, if you're planning on having this done). Just take wax paper folded a few times and cut through with the scissors. It works!

You use pinking shears on fabric that can unravel easily. The shape of the cut keeps long ragged edges and threads from happening.

Pinking shears have a zigzag edge

the zig zag edge it makes helps keep it from unraveling in long strings, its good for removing bulk from seams as well. and if used with felt it will make a decorative edge.
